Ingredients:
2 1/2 cups all-purpose flour
1/2 cup ground pistachios
1 tablespoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
1 3/4 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup milk
1/2 cup raspberry jam
For the Raspberry Glaze:
1 cup raspberry preserves
2 tablespoons water
For the Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
1/2 teaspoon pure almond extract
2 tablespoons milk
For Garnish:
Fresh raspberries
Chopped pistachios
Directions:
Preheat oven to 350°F (175°C). Grease and flour three 8-inch cake pans.
Mix flour, ground pistachios, baking powder, and salt in a bowl. Set aside.
In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
Gradually add the flour mixture alternately with milk, starting and ending with the flour mixture.
Divide batter among prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
For the glaze, heat raspberry preserves and water in a small saucepan over low heat until pourable.
For the frosting, beat butter until creamy. Gradually add powdered sugar, then almond extract and milk until smooth and spreadable.
To assemble, spread raspberry jam between layers of cake. Cover the top and sides with frosting. Pour the raspberry glaze over the top, allowing it to drip down the sides. Garnish with fresh raspberries and chopped pistachios.
