- 2 large boneless skinless chicken breasts, cut into 1-inch cubes
- 2 large sweet potatoes, peeled and diced into 3/4-inch cubes
- 2 tablespoons olive oil, divided
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1 tablespoon butter, optional
- Fresh parsley or thyme, chopped, for garnish
Instructions
- Toss chicken with 1 tablespoon olive oil, garlic powder, smoked paprika, onion powder, thyme, salt, and pepper in a bowl. Let sit for 5–10 minutes.
- Heat 1 tablespoon olive oil in a cast-iron skillet over medium heat. Add sweet potatoes in a single layer, season lightly, and cook for 10–12 minutes until caramelized and tender. Remove and set aside.
- In the same skillet, add chicken in a single layer. Sear for 5–7 minutes, turning occasionally until golden brown and cooked through (internal temp 165°F).
- Return sweet potatoes to the skillet and mix gently. Add butter if using. Cook 2–3 more minutes to blend flavors.
- Garnish with chopped parsley or thyme and serve hot.
