Instructions
- Rinse the long-grain rice under cool, running water to remove excess starch.
- In a medium-sized saucepan, combine the rinsed rice, coconut milk, water, salt, sugar (if using), lime zest, and lime juice.
- Bring the mixture to a gentle boil over medium heat.
- Reduce the heat to low, cover the pan, and simmer for 18-20 minutes until the rice has absorbed all the liquid.
- Remove the pot from heat, let it sit covered for 5 minutes.
- Fluff the rice with a fork and garnish with toasted coconut flakes before serving.
