Instructions
- Prepare the Marinade: In a blender, combine garlic, scallions, hoisin sauce, ketchup, honey, soy sauce, rice wine, rice vinegar, and five-spice powder until you achieve a smooth consistency.
- Marinate the Ribs: Generously coat the pork ribs with the marinade, making sure to reserve about ⅓ cup for later basting. Cover and refrigerate for at least 4 hours or overnight for maximum flavor.
- Preheat the Oven: Set your oven to 300°F (150°C). Line a baking sheet with foil and place an oven-safe rack on top. Fill a shallow pan with hot water, creating steam as the ribs cook.
- Bake the Ribs: Carefully place the marinated ribs on the rack, meat side up. Bake baby back ribs for about 1 hour or St. Louis ribs for 2 hours, monitoring steam levels to keep them moist.
- Increase Temperature: Once baked, remove the ribs and turn the oven temperature up to 450°F (230°C). Discard excess water from the baking sheet, then brush the ribs with the reserved marinade.
- Finish Cooking: Return the ribs to the oven and roast for an additional 20-30 minutes. Baste every 10 minutes until the ribs are caramelized and sticky, giving them that perfect glaze.
- Serve: After cooking, let the ribs rest for a few minutes before cutting between the bones. Garnish with freshly chopped scallions and cilantro for a vibrant finish.
