Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add the rolled oats, nut butter, vanilla extract, baking soda, and salt to the mashed bananas.
- Mix until well combined.
- If using, fold in dark chocolate chips or nuts.
- Drop spoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until lightly golden.
- Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
