Classic Southern Cornbread Recipe

- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup buttermilk
- 1/4 cup unsalted butter, melted
- 2 tablespoons vegetable oil
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup chopped jalapeños or green chiles (optional)
- 2 tablespoons chopped fresh herbs like chives or thyme (optional)
Instructions
- Preheat your oven to 425°F (218°C) and place a cast iron skillet inside to heat up.
- In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, and sugar.
- In a separate bowl, beat the eggs and mix with buttermilk and melted butter.
- Combine wet and dry ingredients until just mixed—do not overmix. Fold in cheese, jalapeños, or herbs if using.
- Carefully remove the hot skillet from the oven and coat with oil.
- Pour the batter into the hot skillet, smoothing out the top.
- Bake for 20–25 minutes until golden brown and a toothpick comes out clean.
- Let cool for 10 minutes before slicing. Serve warm with butter, honey, or your favorite meal.
