Description

A classic British comfort dish, Shepherd’s Pie combines savory ground lamb, vegetables, and a fluffy mashed potato topping, baked until golden and bubbling. Hearty, satisfying, and perfect for a cozy family dinner.


Ingredients

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 500g ground lamb
  • 1 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 200ml beef or chicken stock
  • 1 tsp dried thyme
  • 100g frozen peas
  • Salt and pepper, to taste
  • 900g potatoes, peeled & chopped
  • 4 tbsp milk
  • 2 tbsp butter
  • Handful of grated cheddar (optional)

Instructions

  1. Preheat your oven to 200°C / 400°F.
  2. Pop the potatoes in salted water and boil until tender, about 15-20 minutes.
  3. Heat oil in a pan and fry the onion and carrots until soft, about 8 minutes.
  4. Add garlic and cook until fragrant, about 30 seconds.
  5. Add the lamb and brown it, breaking up clumps. Drain excess fat if desired.
  6. Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper. Cook for a couple of minutes.
  7. Pour in the stock and simmer for 15-20 minutes, uncovered. Add peas for the last five minutes.
  8. Drain the potatoes and mash with butter, milk, and salt. Stir in cheese if desired.
  9. Spoon the mince mixture into a baking dish. Top with the mash.
  10. Bake for 25–30 minutes until golden and bubbling.

Notes

  • Use beef if lamb is unavailable.
  • Feel free to substitute vegetables.
