- 1 pound gnocchi
- 1 head of garlic
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup freshly grated Parmesan cheese
- Chopped parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the top off the garlic head, drizzle with olive oil, and wrap in foil. Place it in the oven for about 30-35 minutes until it’s soft and caramelized.
- In a large pot of boiling salted water, cook the gnocchi according to the package instructions until they float to the top. This usually takes about 2-3 minutes. Drain and set aside.
- Once roasted, squeeze the soft garlic out of the skins into a large bowl. Mash it into a paste with a fork.
- Add the gnocchi to the bowl with the roasted garlic paste, then sprinkle in salt, pepper, and most of the Parmesan cheese. Toss carefully to coat.
- Transfer to a serving bowl and top with remaining Parmesan, and fresh parsley if using.
Notes
- Don’t overcook the gnocchi.
- Experiment with different cheeses like Pecorino Romano or even a sprinkle of feta for a unique twist.
- Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze before cooking for up to 2 months.
