A simple and delicious recipe for Savory Chicken and Sweet Potato Rice Bowls, featuring tender chicken, sweet potatoes, and rice, perfect for a quick and healthy weeknight dinner.


Ingredients

  • 1 lb chicken breast, thinly sliced
  • 2 medium sweet potatoes, diced
  • 1 cup rice (white or brown)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 avocado, sliced (for garnish)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet in a single layer.
  3. Place the sweet potatoes in the oven and roast for about 20 minutes, or until they are fork-tender and lightly caramelized.
  4. While the sweet potatoes are roasting, cook the rice according to package instructions. Set aside when finished.
  5. In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the sliced chicken breast and season with salt and pepper. Cook for about 6-8 minutes, until the chicken is browned and cooked through.
  6. In a large serving bowl, layer the rice, followed by the roasted sweet potatoes and cooked chicken.
