Description

  • 8 oz goat cheese, softened
  • 4 oz cream cheese, softened
  • 1 tablespoon fresh lemon juice

  • 1 teaspoon fresh thyme leaves, plus extra for garnish
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped walnuts or pecans
  • Fresh herbs for garnish (optional)
  • Crackers or sliced baguette for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the beets thoroughly, pat them dry, and wrap each beet individually in aluminum foil.
  3. Place wrapped beets on a baking sheet and roast for 45-60 minutes, or until tender.
  4. Let beets cool slightly, then peel and dice them.
  5. In a mixing bowl, combine softened goat cheese and cream cheese until smooth.
  6. Mix in lemon juice, honey, thyme leaves, salt, and pepper.
