- 4 cups Cold Water (to dilute rhubarb syrup)

Instructions
- In a heavy pot or Dutch oven, mix sliced rhubarb, sugar, and water. Heat over medium-high until boiling, then reduce to low and simmer until rhubarb is tender, about 20-25 minutes.
- Once the rhubarb has softened, strain the mixture through a fine mesh sieve into a bowl, pressing to extract all the liquid. Transfer the syrup to an airtight container and let it cool.
- In a large pitcher, blend the cooled rhubarb syrup with fresh lemon juice and cold water. Stir everything together until well combined.
