Instructions

  1. Peel and boil 1 lb russet potato until fork-tender, about 15 minutes, then mash until completely smooth with zero lumps remaining.
  2. Grate the yellow onion finely, squeeze out all excess liquid through cheesecloth, and combine with ground meat, mashed potato, cilantro, eggs, and spices.
  3. Shape the seasoned mixture into 12 even patties and refrigerate on a parchment-lined tray for 30 minutes to firm up properly.
  4. Press each chilled patty firmly into breadcrumbs on both sides, ensuring an even coat for maximum golden crunch when pan-fried.

Notes
