Pasta e Ceci is a traditional Italian pasta and chickpea soup. It’s a hearty, flavorful, and comforting dish perfect for a satisfying meal. This easy Pasta Ceci recipe brings authentic Italian flavors to your table.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 cup small pasta (like ditalini or tubetti)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
  2. Add garlic, rosemary, thyme, and red pepper flakes (if using). Cook for 1 minute more until fragrant.
  3. Stir in crushed tomatoes and vegetable broth. Bring to a simmer.
  4. Add the drained and rinsed chickpeas. Cover and simmer for 15 minutes to allow flavors to meld.
  5. Stir in the small pasta. Cook according to package directions, or until al dente.
  6. Season the Pasta e Ceci with salt and black pepper to taste.
  7. Serve the Pasta Ceci hot, garnished with fresh parsley and grated Parmesan cheese if desired. This Pasta e Ceci dish is best enjoyed fresh.

Notes

  • For a thicker soup, you can mash some of the chickpeas against the side of the pot before adding the pasta.
