  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup honey
  • 4 tablespoons unsalted butter
  • 4 cups chicken broth
  • 12 ounces fettuccine or linguine pasta
  • Salt and black pepper to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Season the chicken pieces generously with Cajun seasoning, salt, and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the seasoned chicken and sear until golden brown on all sides. Remove chicken from the pot and set aside.
  3. Reduce heat to medium. Add minced garlic to the pot and cook until fragrant, about 1 minute.
  4. Stir in the honey and butter. Cook until the butter is melted and the mixture is slightly thickened.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the pasta to the simmering broth. Stir to prevent sticking. Cook according to package directions, or until al dente, stirring occasionally.
  7. Return the seared chicken to the pot. Stir to coat the chicken and pasta in the sauce.
  8. Continue to cook for a few more minutes, allowing the sauce to thicken and the chicken to heat through.
  9. Taste and adjust seasoning if needed.
  10. Serve hot, garnished with fresh parsley if desired.

Notes

  • For a spicier dish, add more Cajun seasoning or a pinch of cayenne pepper.
  • If you don’t have Cajun seasoning, you can make your own blend with paprika, garlic powder, onion powder, cayenne pepper, oregano, and thyme.
