Ingredients
Scale
- 1 pound ground beef or beef-pork combo
- 1 teaspoon dried thyme or Italian herbs
- 1 clove garlic, finely minced
- Salt and pepper to your liking
- 1/2 cup breadcrumbs
- 1 small onion, diced finely
- 1 large egg
- 2 tablespoons ketchup
- 1/4 cup milk
- 1 teaspoon Worcestershire sauce
- 2 tablespoons softened butter
- 2 cups mashed potatoes, homemade or store-bought
- Salt and pepper for seasoning
- 1/4 cup cream or milk
- Fresh parsley or chives, chopped for garnish
- Cherry tomatoes, chopped for topping
- 12 to 16 silicone or metal liners for muffin pan
Instructions
- Preheat oven to 375°F (190°C). Prepare muffin pan by adding liners or greasing it.
- In a large bowl, combine ground beef, breadcrumbs, milk, garlic, chopped onion, egg, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix gently until combined to keep the meat tender.
- Scoop the meat mixture evenly into muffin cups, filling about three-quarters full. Press down firmly and create a small dip in the center of each.
- Bake for 20 to 25 minutes, or until the meatloaf cupcakes are golden and reach an internal temperature of 160°F (71°C). Let them cool slightly.
- While the meatloaf cupcakes cool, prepare the mashed potatoes. In a separate bowl, beat mashed potatoes, softened butter, and cream with a hand mixer until fluffy and light. Season with salt and pepper to taste.
- Spoon or pipe the mashed potato mixture on top of each meatloaf cupcake.
- Garnish with chopped cherry tomatoes and a sprinkle of fresh parsley or chives.
- Serve the meatloaf potato cupcakes warm. Gravy can be added for extra flavor.
Notes
- For a healthier option, use lean ground beef or ground turkey.
- Preparing the meat mixture in advance and refrigerating it overnight can save time.
- Experiment with different herbs such as basil or oregano for variety.
- Cheese can be added to the mashed potato topping for extra richness.
