Description

Bright, tropical Mango Strawberry Sunset Cupcakes are a delightful treat that will elevate any occasion.

Ingredients

Scale
  • 2 cups All-Purpose Flour (Can substitute with a gluten-free flour blend.)
  • 1 tbsp Baking Powder (Acts as a leavening agent.)
  • 1/2 tsp Salt (Enhances flavor.)
  • 1/2 cup Unsalted Butter (Softened for easy creaming.)
  • 1 cup Granulated Sugar (Sweetens cupcakes.)
  • 2 large Eggs (Provides structure and moisture.)
  • 2 tsp Vanilla Extract (Adds depth of flavor.)
  • 1 cup Milk (Any dairy or non-dairy alternatives work.)
  • 1 cup Mango Purée (Infuses tropical flavor.)
  • 1/2 cup Strawberry Jam (Adds a burst of flavor.)
  • 2 cups Powdered Sugar (Sweetens and thickens frosting.)
  • 1 cup Heavy Cream (Contributes to a light and creamy frosting.)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with colorful cupcake liners.
  2. Whisk together the flour, baking powder, and salt in a medium bowl.
  3. Cream together the softened butter and granulated sugar until light and fluffy—about 3-5 minutes.
  4. Beat in the eggs and vanilla extract, then mix in the milk and mango purée until combined.
  5. Gently stir in the dry ingredients until just combined; do not overmix.
  6. Fill each cupcake liner about ¾ full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool cupcakes on a wire rack until completely cool.
  8. Fill each cupcake with strawberry jam using a piping bag or a knife.
  9. Prepare the frosting by beating softened butter, then gradually add powdered sugar until smooth.
  10. Mix in the vanilla and cream until fluffy.
  11. Divide frosting into three bowls; mix one with mango purée and another with strawberry purée.
  12. Pipe the swirled frosting onto the cooled cupcakes and garnish with fresh fruit slices.
