- 1 ball Pizza dough (Homemade or store-bought thin crust)
- 1 cup Ricotta cheese (Whole milk, drained)
- 1 cup Fresh mozzarella (Torn into chunks)
- 1/3 cup Parmesan cheese (Freshly grated)
- 2 tablespoon Lemon juice (Freshly squeezed)
- Zest of 2 Lemons (Meyer or regular lemons)
- 2 cups Arugula (Fresh)
- 1/4 cup Caramelized onions (Pre-cooked)
- 2 tablespoon Olive oil (Extra virgin)
- 1/4 teaspoon Red pepper flakes (Optional)
- Salt and pepper (To taste)
- 2 tablespoon Fresh basil (Torn)
Instructions
- Preheat your oven to 475°F (245°C). Roll out the pizza dough into a 12-inch circle on a lightly floured surface.
- In a medium bowl, combine ricotta cheese, fresh lemon juice, and lemon zest. Season with salt and pepper. Mix until smooth.
- Spread the lemon ricotta mixture evenly over the pizza dough, leaving a small border for the crust.
- Sprinkle torn mozzarella and caramelized onions over the ricotta. Add grated Parmesan cheese and red pepper flakes, if using.
- Bake for 15-20 minutes, or until the crust is golden and the cheese is bubbly.
- Remove from oven and top with fresh arugula, torn basil leaves, and a drizzle of extra virgin olive oil.
- Slice and serve immediately.

- For a lemon pepper chicken variation, add 6 oz of sliced grilled chicken.
