Ingredients
Scale
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 8 ounces rotini pasta
- 1 cup heavy cream
- 2 tablespoons butter
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Toss chicken pieces with Cajun seasoning.
- Heat olive oil in a skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Stir in lemon juice and cook for another minute. Remove chicken from skillet and set aside.
- Cook rotini pasta according to package directions. Drain.
- In the same skillet, melt butter over medium heat. Add heavy cream and bring to a simmer.
- Stir in Parmesan cheese until melted and sauce is smooth.
- Add drained pasta and cooked chicken to the skillet with the Alfredo sauce. Toss to coat evenly.
- Stir in fresh parsley. Serve immediately.
Notes
- Adjust Cajun seasoning to your spice preference.
- For a lighter sauce, you can use half-and-half instead of heavy cream.
- Other pasta shapes like penne or fusilli will also work well.
- Shrimp or tofu can be substituted for chicken.
- Freshly grated Parmesan cheese provides the best flavor and texture.
