Description
Leche Frita is a delightful Spanish Fried Milk dessert that combines creamy textures with a crispy exterior, making it an irresistible treat.
Ingredients
Scale
- 4.5 cups whole milk
- 1 cup granulated sugar
- 1 stick cinnamon
- 1 piece lemon peel
- 1 piece orange peel
- 0.5 cup cornstarch
- 0.5 cup all-purpose flour
- 1 cup sunflower oil
- 2 medium eggs
- 1 cup all-purpose flour for coating
- 3 tablespoons white sugar
- 3 tablespoons ground cinnamon
Instructions
- Prepare the Infused Milk: Start by placing the lemon peel, orange peel, cinnamon stick, and sugar into a pot with 4 cups of milk. Heat it until it boils, then remove it from the heat and allow it to infuse until it reaches room temperature.
- Dissolve Cornstarch and Flour: In a separate bowl, whisk together the cornstarch and flour with the remaining ½ cup of milk until you achieve a smooth mixture.
- Thicken the Mixture: Remove the infused peels and stick from the milk, then combine with your dissolved starch-flour mixture. Cook this over medium-high heat for 6-7 minutes, stirring continuously until it becomes thick and creamy.
- Set the Mixture: Pour your thickened mixture into a parchment-lined dish, covering it with plastic wrap to prevent a skin from forming. Refrigerate for at least 3 hours, ideally overnight, until firm.
- Cut and Coat: Once set, cut the mixture into bite-sized pieces. Prepare three bowls: one with beaten eggs, another with flour, and the last with a mix of sugar and cinnamon. Coat each piece in flour, then dip it in the egg, and finally return it to the flour mixture for an extra crunch.
- Fry: Heat sunflower oil until hot (about 350°F). Fry the coated pieces until golden brown on all sides, usually around 3-4 minutes. Drain them on paper towels to remove excess oil.
- Finish: While still warm, gently coat the fried leche frita with the sugar-cinnamon mixture for added sweetness. Serve immediately for the best experience!
