Ingredients
Scale
- 3½ cups (420g) all-purpose flour
- 2¼ teaspoons instant yeast
- 1½ teaspoons salt
- 1 cup (240g) warm water
- 1 tablespoon sugar
- 2 tablespoons vegetable oil
- Milk for brushing (optional)
- Sesame or poppy seeds for topping (optional)
Instructions
- In a large bowl, combine flour, sugar, salt, and yeast.
- Add warm water and vegetable oil. Mix until a shaggy dough forms.
- Knead the dough for 8–10 minutes by hand or 6–7 minutes using a stand mixer until smooth and elastic.
- Transfer the dough to a greased bowl. Cover and let it rise for about 1 hour, or until doubled in size.
- Divide the dough into 6 equal pieces and shape each into a tight ball.
- Use a Kaiser stamp or tie each dough ball into a knot for the classic swirl look.
- Place shaped rolls cut-side down on a parchment-lined baking sheet and let rise for another 45–60 minutes.
- Preheat oven to 425°F (220°C).
- Flip the rolls cut-side up. Brush with milk and sprinkle with seeds, if using.
- Bake for 15–17 minutes, or until deep golden and hollow-sounding when tapped.
- Cool on a wire rack before serving.
Notes
- Use bread flour for a chewier texture.
- Add steam to your oven using ice cubes in a hot pan for a crisper crust.
- Store in an airtight container for up to 2 days or freeze for longer storage.
- Replace up to 50% of the flour with whole wheat flour for variation.
