  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1 cup diced fresh or canned peaches (drained if using canned)
  • 8 oz cream cheese (softened)
  • 1/4 cup unsalted butter (softened)
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 1 1/2 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with 12 cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat softened butter, granulated sugar, and honey until fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Gradually incorporate the flour mixture and whole milk, folding in the diced peaches gently at the end.
  6. Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. While cupcakes cool, prepare the frosting: beat softened cream cheese and butter until smooth and creamy.
  9. Add honey and vanilla extract to the cream cheese mixture, mixing until well combined.
  10. Gradually sift in powdered sugar, beating until the frosting is fluffy and spreadable.
  11. Once cupcakes are completely cool, frost them using a piping bag or spatula.
  12. Garnish with fresh peach slices or a drizzle of honey, if desired.
