Flavorful and easy Honey Chipotle Chicken Bowls perfect for meal prep, featuring juicy marinated chicken, rice, beans, corn, avocado, and tomatoes with a sweet and spicy glaze.
Ingredients
Scale
- 1.5 pounds boneless, skinless chicken breasts
- 1/4 cup honey
- 2 tablespoons chipotle in adobo sauce, minced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked rice (white or brown)
- 1 can black beans (15 oz), rinsed and drained
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- Lime wedges for serving
Instructions
- In a medium bowl, whisk together honey, chipotle in adobo sauce, olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper to create the honey chipotle marinade.
- Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or preferably 1-2 hours.
- Preheat your grill or grill pan over medium-high heat. Remove chicken from the marinade, discarding the remaining liquid.
- Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and it has nice char marks.
- Let the grilled honey chipotle chicken rest for 5 minutes, then slice into strips or bite-sized pieces.
- Assemble the bowls: layer cooked rice, black beans, corn, sliced honey chipotle chicken, diced avocado, and cherry tomatoes.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
- For best flavor, marinate chicken for 1-2 hours.
- Allow chicken to rest after grilling to keep it juicy.
- Customize with toppings like cheese or Greek yogurt.
- Store avocado separately if meal prepping for the week.
- For a vegetarian version, use grilled tofu or tempeh marinated in the honey chipotle sauce.
- Reheat bowls gently in the microwave, adding avocado fresh before serving.
- Adjust chipotle quantity for desired spice level.
