Hearty Harvest Casserole is a filling and nutritious dish perfect for breakfast or brunch.

- 1 pound breakfast sausage
- 1 cup diced onions
- 1 cup diced bell peppers (red, yellow, or green)
- 3 cups fresh spinach
- 1 cup diced butternut squash
- 8 large eggs
- 2 cups milk
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- ½ teaspoon garlic powder
- 4 cups cubed bread (day-old bread works best)
- 2 cups shredded cheddar cheese
- ¼ cup chopped fresh parsley (optional garnish)
Instructions
- In a large skillet, cook the sausage over medium heat until browned. Remove and set aside.
- In the same skillet, sauté onions, bell peppers, and butternut squash for 5 minutes. Add spinach and cook until wilted.
- In a large bowl, whisk together eggs, milk, salt, pepper, paprika, and garlic powder.
- In a 9×13-inch baking dish, combine cooked sausage, veggies, and cubed bread. Pour the egg mixture over the top.
- Sprinkle with shredded cheese and cover with aluminum foil.
- Bake at 350°F (175°C) for 30 minutes, then remove foil and bake for another 10-15 minutes.
- Let rest for 5-10 minutes before slicing and serving.
Notes
- This dish can be prepared ahead of time and refrigerated before baking.
- Feel free to substitute vegetables based on your preference.
- Leftovers can be stored in the refrigerator for up to 3 days.
