- 2–3 medium-sized potatoes, thinly sliced
- 1 cup shredded cheese (Gruyère or cheddar)
- 1/2 cup fresh chives, chopped
- 1 tablespoon olive oil

- 1 egg, beaten (for egg wash)
Instructions
- Prepare the crust: Lay the pre-made pie crust on a parchment-lined baking sheet or roll out your homemade crust to about 1/8-inch thickness.
- Sauté the potatoes: In a skillet, heat olive oil over medium heat. Add the thinly sliced potatoes, season with salt and pepper, and sauté for about 5-8 minutes until they start to soften.
- Assemble the galette: Spread the sautéed potatoes on the center of the crust, leaving a 1-2 inch border. Sprinkle the shredded cheese and chopped chives over the potatoes.
- Fold the edges: Gently fold the edges of the crust over the filling, leaving the center exposed. Brush the crust with the beaten egg for a glossy finish.
- Bake: Preheat your oven to 400°F (200°C) and bake the galette for 25-30 minutes, or until the crust is golden brown and the cheese is bubbly.
- Cool and serve: Allow the galette to cool for a few minutes before slicing and serving.
