Description

Grilled chicken bites infused with spicy garlic chili oil, served with creamy Cajun Alfredo pasta and charred zucchini.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks
  • 2 tablespoons chili oil
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Juice of 1/2 lemon

Instructions

  1. Marinate the chicken bites in chili oil, minced garlic, olive oil, smoked paprika, onion powder, salt, pepper, and lemon juice for at least 30 minutes, or preferably overnight.
  2. Preheat a cast iron grill pan or outdoor grill to medium-high heat.
  3. Grill the marinated chicken bites until cooked through and slightly charred, about 3-4 minutes per side. Ensure an internal temperature of 165°F.
  4. While the chicken grills, cook pasta according to package directions in salted boiling water. Reserve about 1 cup of pasta water before draining.
  5. In a sauté pan, prepare the Cajun Alfredo sauce.
  6. Add the drained pasta to the sauce, along with the charred zucchini and peppers. Toss to coat.
  7. Serve the Garlic Chili Oil Chicken Bites alongside the Cajun Alfredo pasta and charred zucchini.
