Ingredients
Scale
- 4 medium Yukon gold potatoes, diced
- 1 large yellow onion, sliced thin
- 14 oz smoked Polish sausage, sliced into rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Parboil the potatoes for 5-6 minutes if you want them to cook faster.
- Dry the potatoes thoroughly after washing or parboiling.
- Heat olive oil in a large skillet or cast iron pan over medium-high heat.
- Add the sliced smoked Polish sausage and cook until browned and slightly crispy. Remove the sausage from the skillet and set aside.
- Add the diced potatoes to the skillet. Cook for 8-10 minutes, stirring occasionally, until they begin to brown and crisp.
- Add the sliced onions to the skillet with the potatoes. Continue to cook for another 5-7 minutes, until the onions are softened and slightly caramelized.
- Stir in the garlic powder, paprika, and oregano. Season with salt and pepper to taste.
- Return the cooked sausage to the skillet and stir to combine with the potatoes and onions. Cook for another 2-3 minutes, allowing the flavors to meld.
- Garnish with fresh chopped parsley, if desired.
Notes
- For extra creaminess, use red potatoes.
- Add crushed red pepper flakes for a hint of heat.
- Sliced bell peppers can be added for color and sweetness.
- Melt shredded cheese over the top just before serving.
