Description

A warm, hearty dish combining ground beef with savory vegetables and topped with creamy mashed potatoes, perfect for families. This Easy Shepherd’s Pie is a classic comfort food that’s quick to prepare.

Ingredients

Scale
  • 1 lb ground beef (or ground lamb for a traditional touch)
  • 1 cup carrots, diced
  • 1 cup peas (frozen works well)
  • 1 cup onion, chopped
  • 2 cups mashed potatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce (optional)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat a splash of olive oil in a large skillet over medium heat, then add the ground beef, cooking until browned. Break it up with a spatula.
  3. Add the chopped onions and diced carrots to the skillet with the meat. Cook for about 5 minutes, until the onions are translucent.
  4. Stir in the peas, tomato paste, Worcestershire sauce, salt, and pepper.
  5. Pour in the beef broth and let the mixture simmer for about 10 minutes until slightly thickened.
  6. Transfer the meat mixture into a baking dish.
  7. Evenly spread the mashed potatoes on top, covering the filling completely.
  8. Bake for about 20 minutes, or until the top is golden brown. Broil for the last few minutes for extra crunch if desired.
  9. Let it cool for a few minutes before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
  • Reheat in the oven or microwave.
  • Customize the meat or veggies with ground turkey or other leftover vegetables.
  • For richer mashed potatoes, add extra butter and cream.
