Crispy & Delicious Air Fryer Zucchini Fries are a fantastic alternative to traditional fries, offering a crunchy exterior and tender interior.

- 2 medium zucchinis
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 large eggs
- 1 cup breadcrumbs (Panko for extra crunch)
- Salt and pepper to taste
- Cooking spray or olive oil spray
Instructions
- Wash and dry the zucchinis. Cut off the ends and slice them into sticks about 1/4 inch thick.
- In one bowl, combine the all-purpose flour with garlic powder, Italian seasoning, salt, and pepper.
- In a second bowl, beat the eggs until well combined.
- In a third bowl, place the breadcrumbs.
- Take each zucchini stick and coat it in the flour mixture, dip it into the egg, and roll it in the breadcrumbs until fully covered.
- Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
- Once preheated, place the zucchini fries into the air fryer basket in a single layer and lightly spray the tops with cooking spray.
- Air fry the zucchini fries for 10-12 minutes or until golden brown and crispy, shaking them halfway through.
- Once cooked, remove them from the air fryer and serve immediately with your favorite dipping sauces.
