- 1 pound rigatoni pasta
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 (16 ounce) box Velveeta cheese, cubed
- 2 cups shredded mozzarella cheese
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- Salt and freshly ground black pepper to taste
- 1/4 cup chopped fresh parsley, for garnish (optional)
Instructions
- Cook the rigatoni pasta according to package directions until al dente. Drain and set aside.
- While the pasta is cooking, season the chicken pieces with salt and pepper.
- Heat olive oil in a large skillet or deep sauté pan over medium-high heat. Add the chicken and cook until browned and cooked through. Remove chicken from the skillet and set aside.
- Reduce the heat to medium-low. Add the minced garlic to the skillet and cook for about 1 minute until fragrant, being careful not to burn it.
- Add the cubed Velveeta cheese, shredded mozzarella cheese, heavy cream, and chicken broth to the skillet. Stir constantly until the cheeses are melted and the sauce is smooth and creamy.
- Season the sauce with salt and pepper to taste.
- Return the cooked chicken to the skillet with the sauce.
- Add the drained rigatoni pasta to the skillet. Toss everything together until the pasta and chicken are well coated with the creamy Velveeta and mozzarella garlic sauce.
- If the sauce is too thick, you can add a splash of reserved pasta water to reach your desired consistency.
- Serve the Creamy Velveeta Chicken Rigatoni immediately, garnished with fresh parsley if desired.

- For a milder garlic flavor, use fewer cloves of garlic.
