Ingredients
Scale
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (8 ounce) package Velveeta cheese, cubed
- 1 cup sour cream
- 1 pound penne pasta, cooked according to package directions
- Salt and black pepper to taste
- Optional: Sautéed mushrooms, peas, or spinach
Instructions
- Cook ground beef in a large skillet over medium heat until browned. Drain off any excess grease.
- Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
- Reduce heat to low. Add cubed Velveeta cheese to the skillet and stir until melted and smooth.
- Stir in sour cream until well combined. Season with salt and pepper to taste.
- Add the cooked penne pasta to the skillet and toss to coat evenly with the sauce.
- If using, stir in optional add-ins like sautéed mushrooms, peas, or spinach.
- Serve hot and enjoy your creamy Velveeta beef stroganoff.
Notes
- For a leaner version, use ground turkey or chicken.
- Greek yogurt can be substituted for sour cream.
- Other pasta shapes like rotini, fusilli, or rigatoni work well.
- Gluten-free pasta can be used, adjust cooking time as needed.
- For a vegetarian option, use plant-based crumbles instead of beef.
