Description
A rich and creamy pasta dish featuring tender shrimp, earthy mushrooms, and fresh spinach, all coated in a velvety sauce and tossed with pasta shells. This easy one-pan meal is perfect for weeknights or special occasions.

- 1 pound jumbo shrimp, peeled and deveined
- 8 ounces medium pasta shells
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 pound cremini or button mushrooms, sliced
- 4 cloves garlic, minced
- 5 ounces baby spinach
- 1.5 cups heavy cream
- 1 cup grated Parmesan cheese
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook pasta shells according to package directions. Drain and set aside.
- While pasta is cooking, heat butter and olive oil in a large skillet over medium-high heat.
- Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Add sliced mushrooms to the same skillet and cook until browned and tender, about 5-7 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Add spinach to the skillet and cook until wilted, about 2-3 minutes.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce is smooth and creamy.
- Season the creamy spinach mushroom sauce with salt and black pepper to taste.
- Return the cooked pasta shells and shrimp to the skillet. Toss gently to coat everything in the creamy spinach mushroom shrimp sauce.
- Serve immediately.
Notes
- For extra flavor, you can add a pinch of red pepper flakes to the sauce.
- Garnish with fresh parsley before serving.
- If the sauce is too thick, add a splash of milk or pasta water to thin it out.
