- 2 large yellow onions, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/4 cup white wine
- 1/2 cup beef or vegetable broth
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/3 cup grated Parmesan cheese
Instructions
- Slice the onions and cook them in a skillet with butter and olive oil over low heat for 25–30 minutes, stirring occasionally until deeply caramelized.
- Add minced garlic and cook for 1 minute.
- Deglaze the pan with white wine, scraping up the browned bits.
- Stir in the broth and thyme. Simmer for 5 minutes to build flavor.
- Add the heavy cream and lower the heat. Simmer for 3–5 minutes until slightly thickened. Season with salt and pepper.
- Boil the tortellini in salted water according to package directions, about 3–4 minutes. Drain and set aside.
- Add tortellini to the sauce, stir gently, and let everything cook together for 2 minutes.
- Finish with Parmesan and fresh thyme. Serve hot.
