Instructions
- Gather all your ingredients. Ensure you have a ripe avocado that’s easy to mash.
- In a food processor, combine the avocado, chickpeas, tahini, minced garlic, lemon juice, and salt.
- Pulse until the mixture is well blended, scraping down the sides as necessary.
- Add water a tablespoon at a time until you reach your desired consistency.
- Taste and adjust the seasoning if necessary, adding more salt or lemon juice to suit your palate.
- Transfer to a serving bowl, drizzle with olive oil if desired, and garnish with paprika or other toppings. Serve immediately with veggies, pita chips, or spread it on sandwiches.
Notes
- Store leftovers in an airtight container in the fridge for 2-3 days. Cover the top with plastic wrap to minimize browning.
- To freeze, portion into freezer bags. It can last up to 3 months. Thaw in the refrigerator overnight, then stir before serving.
