Description

This Cranberry Pistachio Cheese Log is a festive and easy appetizer perfect for holidays. It features a creamy cream cheese base mixed with honey and herbs, then rolled in tart cranberries and crunchy pistachios. It’s a visually appealing and delicious addition to any cheese board or party spread.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 2 tablespoons honey
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup dried cranberries
  • 1/2 cup shelled pistachios, chopped

Instructions

  1. In a medium bowl, combine the softened cream cheese, honey, chopped thyme, chopped rosemary, salt, and pepper. Mix until well combined and smooth.
  2. Spoon the cream cheese mixture onto a piece of plastic wrap. Shape it into a log.
  3. In a small bowl, combine the dried cranberries and chopped pistachios.
  4. Roll the cream cheese log in the cranberry and pistachio mixture, pressing gently to ensure an even coating on all sides.
  5. Wrap the log tightly in plastic wrap.
  6. Refrigerate for at least 30 minutes to allow the log to firm up before serving.
  7. Serve your cranberry pistachio cheese log with crackers or baguette slices.

Notes

  • For a different flavor, you can substitute maple syrup for honey.
  • Fresh cranberries can be used if available, but ensure they are finely chopped.
  • If you prefer a finer coating, you can pulse the cranberries and pistachios in a food processor before rolling.
  • This cheese log can be made a day in advance.
