- 2 cups fresh cranberries, halved
- 1 1/2 cups powdered sugar
- 2 tablespoons fresh-squeezed orange juice
- 1 1/2 teaspoons orange zest
Instructions
- Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
- In a medium bowl, whisk the flour, salt, and baking powder.
- In a large bowl, combine the sugar, orange zest, buttermilk, oil, eggs, orange juice, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the cranberries.
- Pour the batter into the prepared pan and bake for 60-70 minutes, or until a toothpick comes out clean.
- Allow the bread to cool, then drizzle with optional orange glaze if desired.
