- 1/2 teaspoon baking soda
- 1/2 teaspoon cream of tartar
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1 cup unsalted butter, softened
- 1 1/4 cups granulated sugar
- 1/4 cup light brown sugar
- 1 large egg
- 1/4 cup eggnog
- 1 teaspoon vanilla extract
- Extra granulated sugar for rolling
- Cinnamon sugar for sprinkling (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
- In a medium bowl, whisk together flour, baking soda, cream of tartar, salt, and nutmeg.
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar for 2–3 minutes until light and fluffy.
- Add in the egg, eggnog, and vanilla extract. Mix until well incorporated.
- Gradually add the dry mixture to the wet ingredients, mixing just until no flour streaks remain.
- Scoop the dough using a tablespoon or cookie scoop and roll each ball in granulated sugar. Optionally, sprinkle tops with cinnamon sugar.
- Place on baking sheets, spacing 2 inches apart.
- Bake for 9–11 minutes, or until edges are just set and tops appear slightly cracked.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack.
- Serve warm or let cool completely before storing.
