Welcome, cookie lovers! As the season of Christmas is approaching it’s hard to find anything quite so cozy than baking cookies. You can bake up a batch of festive Chocolate Snowball Cookies! These delicious, melt-in-your-mouth delights, also called”Mexican wedding cookies” or “Mexican wedding cookies” or “Russian tea cakes,” are a wonderful variation on the classic snowball cookie. In powdered sugar, they are rolled to make them look like snow. Both are stunning and delicious. Let’s get started and make chocolate magic happen within the kitchen!
Ingredients
- 1 cup of unsalted butter, softened
- 1 cup of powdered sugar (plus additional sugar to roll)
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 3/4 cup powdered cocoa
- 1 teaspoon of salt
- 1 cup chopped finely (optional You can also try nuts like walnuts, pecans and cherries)
Ingredient Substitutions:
- Gluten-Free Flour To bake gluten-free you can replace the all-purpose flour by a 1:1 gluten-free baking flour.
- Nut-Free Options: Simply omit the nuts to get a version that is nut-free.
Instructions
Step 1: make up the Oven and Baking Sheet
- Pre-heat the oven until 350 degrees F (175degC).
- Line baking sheets with parchment paper to avoid sticking.
2: Mix the Dough
- In an enormous mixing bowl, mix together the softened butter with powdered sugar until the mixture is fluffy and light. This is the key step to make the cookies soft and delicious to eat.
- Add vanilla extract and mix until blended.
3: Add Dry Ingredients
- Gradually introduce the cocoa powder, flour and salt to the butter mix.
- Blend until dough becomes completely smooth and all dry ingredients are thoroughly blended.
4: Fold in Nuts (Optional)
- When with Nuts, add them to the batter until they are evenly spread. This gives some crunch and adds to the chocolate taste.
5: Shape the Cookies
- Make the dough into 1 inch balls and place them on the baking sheet. Place them approximately 1 inch from each other to warrant uniform baking.
6: Bake the Cookies
- Bake the cookies for between 12 and 15 minutes to warrant the edges have set. They’re tops could be slightly cracked, but this is normal and gives the cookies an appealing rustic appearance.
- Let the cookies dry on the baking tray for 5 to 10 minutes.
7: Add the “Snow” Coating
- When the cookies are still cool, roll each one in powdered sugar to form the first layer of snowy coating.
- After cooling, roll the cookies in powdered sugar once more to create a festive sparkling, snowy end.
Notes
- Use softened Butter Be sure it is soft, but not melting. This will help complete an extremely smooth dough.
- Double Roll with Powdered Sugar For best outcome and the perfect snowy effect Roll the cookies a second time while they are warm, and then again when they cool.
- Create your own add-ins Try adding some peppermint extract for a festive spice!
