- Salt and black pepper to taste
- 2 tbsp chopped green onions, for garnish

- 8 oz rotini pasta
- 1 tbsp butter
- 1.5 cups sweet corn, frozen or fresh
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tsp Cajun seasoning
- Salt and black pepper to taste
Instructions
- Cube the chicken breasts into bite-sized pieces.
- Heat olive oil and 1 tbsp butter in a non-stick skillet over medium-high heat.
- Add chicken to the skillet and sear until golden brown on all sides and cooked through.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in chili garlic sauce and smoked paprika. Season with salt and black pepper.
- Cook for another minute, allowing the sauce to coat the chicken. Remove chicken from the skillet and set aside.
- In a large pot, cook rotini pasta according to package directions until al dente. Drain the pasta.
- While the pasta is cooking, melt 1 tbsp butter in the same skillet over medium heat.
- Add sweet corn and Cajun seasoning. Cook for 2-3 minutes until the corn is heated through and seasoned.
- Pour in heavy cream and bring to a simmer.
- Stir in grated Parmesan cheese until the sauce is smooth and creamy. Season with salt and black pepper.
- Add the cooked rotini pasta to the skillet with the Alfredo sauce and toss to coat.
