Description

A creamy and flavorful chicken salad featuring tender chicken, juicy grapes, and crunchy pecans. This easy recipe is perfect for a quick lunch or casual gatherings.

Ingredients

Scale
  • 2 cups cooked chicken, diced (rotisserie chicken recommended)
  • 1 cup seedless grapes, halved
  • 1/2 cup pecans, chopped
  • 1/2 cup Greek yogurt or mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Optional: Fresh parsley or dill for garnish

Instructions

  1. Prepare the chicken: If not already cooked, poach or grill chicken until done. Let it cool, then dice.
  2. Mix the dressing: In a large bowl, combine Greek yogurt (or mayonnaise), Dijon mustard, honey, salt, and pepper. Whisk until smooth.
  3. Combine ingredients: Add the diced chicken, halved grapes, and chopped pecans to the dressing. Gently fold everything together until evenly coated.
  4. Taste and adjust: Sample the chicken salad and add more salt, pepper, or honey if needed.
  5. Chill and serve: Cover the salad and refrigerate for at least 30 minutes. Serve chilled on its own, over greens, or in sandwiches.

Notes

  • This chicken salad with grapes and pecans keeps well in the refrigerator for 3-4 days.
  • Use leftover cooked chicken or rotisserie chicken for convenience.
