Ingredients
- Cauliflower: 1 medium head, cut into florets
- Olive Oil: 2 tablespoons
- Garlic Powder: 1 teaspoon
- Paprika: 1/2 teaspoon
- Salt: 1/4 teaspoon
- Pepper: 1/4 teaspoon
- Fresh Parsley: 2 tablespoons, chopped (optional)
- Greek Yogurt or Sour Cream: 1/2 cup
- Garlic: 1 clove, minced
- Lemon Juice: 1 tablespoon
- Salt: 1/8 teaspoon
- Pepper: 1/8 teaspoon
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Wash and dry the cauliflower. Cut into bite-sized florets.
- In a bowl, toss cauliflower with olive oil, garlic powder, paprika, salt, and pepper.
- Spread cauliflower on the baking sheet in a single layer.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- While cauliflower bakes, combine Greek yogurt (or sour cream), minced garlic, lemon juice, salt, and pepper in a small bowl. Mix well.
- Remove cauliflower from oven, let cool slightly. Transfer to a platter, drizzle with garlic sauce, and garnish with parsley. Serve immediately.

- Ensure cauliflower florets are roughly the same size for even cooking.
- Do not overcrowd the baking sheet to allow for proper crisping.
