Description

Ingredients

  • 24 cherry tomatoes
  • 12 fresh mozzarella balls (bocconcini or ciliegine)
  • 12 fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • Salt and freshly cracked black pepper to taste
  • 12 wooden skewers or toothpicks

Instructions

  1. Wash and thoroughly dry the cherry tomatoes.
  2. Drain the fresh mozzarella balls. If using larger balls, cut them into bite-sized pieces similar in size to the tomatoes.
  3. Gently wash and pat dry the fresh basil leaves.
  4. Thread one cherry tomato onto a skewer, pushing it about halfway down.
  5. Add one piece of mozzarella to the skewer.
  6. Fold a basil leaf and add it onto the skewer after the mozzarella.
  7. Top the skewer with a second cherry tomato.
  8. Arrange the finished caprese skewers on a serving platter.
  9. Drizzle lightly with extra virgin olive oil and balsamic glaze just before serving.
  10. Season with salt and freshly cracked black pepper to enhance the flavors.

  • For best flavor, serve caprese skewers at room temperature. Remove them from the refrigerator 20-30 minutes before serving.
