Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Red food coloring

Instructions

  1. Cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the eggs one at a time, then stir in the vanilla and peppermint extracts.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half. Tint one half with red food coloring until you achieve a vibrant candy cane color.
  6. Chill both doughs for at least 30 minutes.
  7. On a lightly floured surface, roll out each half of the dough into a rectangle.
  8. Place the red dough on top of the white dough.
  9. Carefully roll the doughs together into a log.
  10. Slice the log into 1/4-inch thick rounds.
  11. Place the candy cane cookie rounds on a baking sheet lined with parchment paper.
  12. Bake at 375°F (190°C) for 8-10 minutes, or until the edges are lightly golden.
  13. Let the candy cane cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
