Instructions
- Preheat your oven to 350°F (175°C). Spread pecan halves on a baking sheet and toast for 8-10 minutes until fragrant. Let cool, then chop.
- In a large bowl, beat melted butter, dark brown sugar, and granulated sugar until light and fluffy.
- Add the egg, egg yolk, and vanilla extract to the butter mixture. Mix until well combined.
- In a separate bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
- Fold in the chopped toasted pecans and toffee bits (if using).
- Cover the dough and refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
