Description
A simple and creamy traditional bread sauce recipe, perfect as a side dish for roast chicken and other holiday meals. This easy homemade bread sauce is quick to prepare.

- 2 cups whole milk
- 1 small onion, peeled and studded with 4-6 cloves
- 1/4 teaspoon ground mace (optional)
- Salt and white pepper to taste
- 4 tablespoons unsalted butter
- 1 1/2 cups fresh white breadcrumbs
- 1 tablespoon finely chopped fresh parsley (for garnish)
Instructions
- In a saucepan, combine the milk and the studded onion. Add the mace, if using. Heat gently over medium heat until it just begins to simmer. Do not boil. Remove from heat, cover, and let steep for 15-20 minutes to infuse the milk.
- Remove the onion from the milk. Season the milk with salt and white pepper.
- Melt the butter in a separate saucepan over medium heat. Add the breadcrumbs and cook, stirring constantly, until they are lightly golden and toasted.
- Gradually whisk the warm, infused milk into the toasted breadcrumbs.
- Cook over low heat, stirring frequently, until the bread sauce thickens to your desired consistency. This usually takes about 5-10 minutes.
- Taste and adjust seasoning with salt and white pepper if needed.
- Serve the warm bread sauce, garnished with fresh parsley.
Notes
- For a richer flavor, you can use half milk and half cream.
- If you don’t have fresh breadcrumbs, you can make them by pulsing stale bread in a food processor.
- Ensure you use white breadcrumbs for the most traditional bread sauce.
