Description

These Blueberry Blondies are a delightful treat, offering a perfect balance of sweet and tangy flavors with a tender, chewy texture. Easy to make with simple ingredients, they feature juicy bursts of blueberries and a bright lemon glaze.

Ingredients

  • Unsalted Butter: 1/2 cup, melted
  • Granulated Sugar: 1 cup
  • Egg: 1 large
  • Vanilla Extract: 1 teaspoon
  • All-Purpose Flour: 1 1/4 cups
  • Salt: 1/4 teaspoon
  • Fresh Blueberries: 1 cup
  • Lemon Zest: 1 teaspoon
  • Powdered Sugar: 1/2 cup
  • Fresh Lemon Juice: 2 tablespoons

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving an overhang for easy removal.
  2. Melt the butter in a microwave-safe bowl or on the stove. Let it cool slightly.
  3. In a large bowl, whisk together the melted butter, granulated sugar, egg, and vanilla extract until smooth.
  4. Add the flour, salt, and lemon zest to the wet ingredients. Mix with a spatula until just combined; do not overmix.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. While the blondies bake, prepare the glaze. Whisk together the powdered sugar and lemon juice until smooth.
  9. Let the blondies cool completely in the pan before drizzling with the lemon glaze.
  10. Cut into bars and enjoy your homemade blueberry blondies.

Notes

  • For gluten-free blueberry blondies, use a good 1:1 gluten-free flour blend.
  • You can use frozen blueberries; toss them with an extra teaspoon of flour before adding to the batter to prevent bleeding.
  • For a vegan option, substitute the butter with vegan butter and the egg with a flax egg (1 tbsp flaxseed + 3 tbsp water).
  • Store leftover blueberry blondie bars in an airtight container at room temperature for up to 3 days.
