Ingredients

Scale
  • 1 lb (450 g) store-bought or homemade gnocchi
  • 8 oz (225 g) chorizo sausage, sliced or crumbled
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup (250 ml) heavy cream
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1/2 cup (125 ml) chicken broth
  • 1/2 tsp smoked paprika
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups (60 g) fresh spinach, roughly chopped
  • Salt and pepper to taste

Optional substitutions:

  • Swap chorizo for plant-based sausage for a vegetarian option.
  • Use coconut cream for a dairy-free version.

Instructions

Step1: Cook the Gnocchi

  1. Bring a large pot of salted water to a boil.
  2. Cook gnocchi according to package instructions, typically 2-3 minutes or until they float to the surface.
  3. Drain and set aside.

Step2: Sauté the Chorizo

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the sliced or crumbled chorizo and cook until browned, about 5 minutes.
  3. Remove the chorizo from the skillet, leaving the flavorful oil behind.

Step3: Make the Sauce

  1. In the same skillet, sauté garlic for 1 minute until fragrant.
  2. Add chicken broth and heavy cream, stirring to combine.
  3. Stir in smoked paprika and red pepper flakes for a kick of heat.

Step4: Combine the Ingredients

  1. Return the cooked gnocchi and chorizo to the skillet.
  2. Add Parmesan cheese and spinach, stirring until the cheese melts and the spinach wilts.
  3. Simmer for 2-3 minutes, allowing the flavors to meld.

Step5: Serve and Enjoy

  1. Season with salt and pepper to taste.
  2. Serve immediately, garnished with extra Parmesan and fresh parsley if desired.

Notes

  • Use pre-cooked gnocchi to save time.
  • For a smoky depth of flavor, try adding a dash of smoked paprika.
  • Always taste and adjust seasoning before serving.
