Instructions
Step1: Prepare the Puff Pastry
- Preheat the oven to 375°F (190°C).
- Roll out the puff pastry sheets on a baking tray lined with parchment paper.
- Prick the pastry with a fork to prevent puffing and bake for 10-15 minutes until golden brown.
- Let it cool completely.
Step2: Make the Custard Filling
- In a medium saucepan, combine milk, cream, and vanilla. Heat over medium until warm.
- In a separate bowl, whisk sugar, cornstarch, and egg yolks until smooth.
- Slowly add the warm milk mixture to the egg mixture, whisking continuously.
- Return the mixture to the pan and cook over low heat until thickened, stirring constantly.
- Allow the custard to cool, covering it with plastic wrap to prevent a skin from forming.
Step3: Assemble the Vanilla Slice
- Place one sheet of cooled puff pastry on a serving tray.
- Spread the custard evenly over the pastry.
- Top with the second sheet of pastry and press gently.
Step4: Prepare the Icing
- Mix powdered sugar, milk, and vanilla until smooth.
- Spread the icing evenly over the top layer of pastry.
Step5: Chill and Serve
- Refrigerate for at least 4 hours before slicing.
- Cut into squares or rectangles and serve.
Notes
- For extra stability, use a sharp knife to cut clean slices.
- Always chill the custard thoroughly before assembling for easier handling.
- Add a pinch of salt to the custard for a flavor boost.
