Ingredients

  • ½ cup unsalted butter (at room temperature)
  • 1 cup mashed ripe bananas (about 3 medium bananas)
  • 1 cup buttermilk (or yogurt)
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Whipped cream (for frosting)
  • Chocolate syrup
  • Chopped nuts (for garnish)
  • Maraschino cherries (for topping)
  • Crushed pineapple (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Whisk until well combined.
  3. Add butter, mashed bananas, buttermilk, eggs, and vanilla extract to the dry ingredients. Beat on medium speed for about 2 minutes until the batter is smooth.
  4. Divide the batter evenly between the prepared cake pans and smooth the tops.
  5. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow cakes to cool in pans for 10 minutes before transferring to wire racks to cool completely.
  7. Once cooled, spread whipped cream over the top of one cake layer. Drizzle with chocolate syrup and add crushed pineapple, if desired.
  8. Place the second layer on top. Frost the top and sides of the entire cake with whipped cream.
  9. Garnish with chopped nuts, maraschino cherries, and a final drizzle of chocolate syrup.
